Not just your usual meatball recipe, this meatball has protein, vegetables and carbohydrate. Perfect for little mouths and fussy eaters. Very quick preparation, and cooks easily on stove. Let you spend more time with the kids!
What you need:
- 500gr mince beef
- 1cup white rice
- 1/4cup grated carrots
- 1/4cup grated zucchini
- 2teaspoons turmeric powder
- 1teaspoon garlic powder
- 2 x 400gr cans of tomato soup
- Mix all the ingredients (other than the tomato soup) in a big bowl. Make sure they are well mixed, and form balls (size of golf balls)
- Place tomato soup in a pan and put all meat balls in the pan. Bring pot to boil and turn the heat down and simmer meatballs until they are all cooked through (about 45mins).
